I know this is a bit of a move away from the norm but I have already spoken about my new interest in coffee and after having a play with my friends new bespoke coffee machine I thought I would discuss espresso coffee. Now this really does involve a scientific mind and an artist’s touch! I’m not saying I have quite mastered those two things but practice makes perfect! Anyway, what makes the perfect espresso and how do you achieve it? An espresso coffee is a strong, short shot of coffee with a well-balanced flavour. It is knowing how to create this balance that really does create the perfect espresso.
So, in regards to flavour the shot should not taste too bitter, too acidic, too sour or too weak. When you drink it there should be a nice balance on the tongue as opposed to one particularly strong flavour. When it pours from your machine it should go from dark to light in a steady manor creating a rich, thick, golden crème. To achieve this you first of all need to make sure the grind of the coffee used is exactly right, for espresso the grind needs to be very fine and a good grinder is therefore essential. With a good grinder you must find where the burrs inside meet and at this point you should have found the sweet spot. From here you can adjust the grind ever so slightly to achieve what you need. At this point you will need to fill your group head with the ground coffee, tamp it firmly and then insert it into your coffee machine. You will then need to time how long the coffee takes to extract from your machine. You should be aiming for 25 seconds, a little less than this and up to 30 is also ok. Now if the coffee comes out too quickly then your grind is too course and needs to made finer - to taste it will be weak and sour. If it comes out too slowly then the coffee has been over-extracted which means it will taste bitter. In this case it is too fine and the water is taking too long to travel through the grounds so needs to be made courser. There is a lot of trial and error with this and it takes a lot of practice and even more patience to get it exactly right. But, if like me, once you do, you will never look back!

Hi all and welcome back to my home and garden blog. I’ve recently redone my kitchen and one of the things I was really excited to buy a KitchenAid or a Kenwood K Mix. Seeing as we’d already spent a lot of money on the redesign and decoration of our new kitchen, we couldn’t afford to buy a brand new mixer, or the famed KitchenAid. Instead we had a look on my favourite second hand online classified ads website, www.forsale.co.za where I managed to scoop up the Kenwood K-Mix in Raspberry for an incredible price, and it came with some of the great attachments including the Spaghetti pasta cutter and the Flat Pasta Roller, although I have a feeling there’s still lots of attachments I would like to purchase! Hi folks, so Viv here again. So sorry for the lack of updates lately, but I’ve been madly gardening in the beautiful spring time, getting ready for summer. My sister and her two girls have recently moved into my neighbourhood and we have discovered that my garden is a mystical wonderland inhabited by many fairies, so we have created a little village of fairy cottages for them all to live. Welcome back folks. Today I wanted to share with you a big project I’m currently working on and the steps I need to complete before I achieve it. The main goal is to build a veggie garden and while I’d love to say that’s the essence of the project I’m currently working on, the truth is that for the moment I’m just laboring: cutting, clearing, weeding and pulling. The notion of planting and edging the garden seems a lifetime away at this stage. I cannot believe how rapidly, in just a short period of time, things can grow here in the tropics. I live up in the jungle next to the National Park so the variety of life here is wonderful. I’m literally surrounded by a million different shades of green. Hey there folks. I’ve been feeling a bit run down of late which is why I have been a bit quiet here on the blog. I have been burning the candles at both ends and not maintaining the healthiest of diets if I am being honest. Hi there. Welcome back to my Blog. Hope you are all well! Life is pretty hectic at the moment but I am having a really great time. I told you recently that I was helping my friend set up a new café. Well I have really immersed myself into the role – I don’t think my friend was expecting me to do so much but she has been really thankful for my help and loves all of my design ideas. I am actually thinking about taking this up as a regular thing. I have a lot of friends in the area who are always looking for interior designers to help with design ideas for their homes and businesses so I think I would be able to find a fair bit of work. Word of mouth is obviously really important so if my friend is happy with everything I do (which she definitely seems to be so far) then I know this will get passed onto other people. Hey its Viv and I’m back for another chat. I’ve been a bit busy over the last week or so, so it’s been a while since the last time I got a post up. You know how it goes, another week goes by in the blink of an eye and you’re wondering where it went. I’d been doing trips backwards and forwards to my mother’s house as she hasn’t been well. I’ve been getting her shopping, cooking her food, there’s been trips to the hospital and all this whilst trying to fit in a job and some me time. Well things have thankfully calmed down a bit now.
